Fresh Black Winter Truffle (HK$38 per gram)

1.   We will take the order size as the minimum size we should get.  We will try to obtain a truffle that matches the size you want.   If you can give us a range then it will be easier.

 

2.   Make the cash payment based on the minimum size you want.  Details of how to pay can be seen at check out.

 

3.  Once we recieve your payment, we will meet the truffle hunters in the morning of the next delivery pick up.  If we can find something within your requested size, we will weigh it, take a photo and then send you the exact weight. If we have a choice, we will choose something closest to your minimum weight. We then immediately ship the truffle to Hong Kong, in our temperature controlled packaging.

 

4.  As the truffle is on its way to Hong Kong, we will also ask for final payment to be made, based on its exact weight. For this payment, you can either pay to our bank account, PayMe or we can take cash upon delivery.

 

5.   On the same day it arrives in Hong Kong, we will check it, re-package it and deliver on the same day, afternoon, for you to enjoy.

Best enjoyed when finely sliced or shaved they can be used uncooked or lightly sautéed in truffle oil or butter which brings out the flavour to a slightly pepper, bitter taste. Perfect for adding to sauces, pasta dishes or risotto to create a truly memorable dish.

 

For a starter we recommend you allow approximately 10 grams of Black Winter Truffles per person. Please allow approximately 20 grams per person for a main course.

 

Black Winter Truffles, Tuber Melanosporum, are perishable but will last for up to 10 days if stored correctly and according to the care instructions enclosed with your delivery.

 

Our truffles have a general clean from the farmer but it is likely that some dirt will still remain.  Do not clean this dirt until you are ready to consume, as this thin layer will keep the truffle in a better condition and allow them to mature

Wrap the truffle in the dry cloth and keep it in the airtight container supplied

 

Keep it in a cool dark place, preferably the refrigerator

 

Check it daily, wipe away any condensation that collects inside the container and change the cloth if damp or wet

 

If it grows a little white mould, it is still ok, just clean that off with the dirt when you prepare

 

DO NOT store the truffle in rice as it will remove all the moisture and a lot of the aroma 

You need a brush with medium hard bristles (such as toothbrush) and a smooth rounded knife

 

Carefully brush the truffle to remove any dirt residue, preferably without using water

 

If needed, use the tip of a knife to remove any further dirt residue

 

In any case, once the skin of the truffle is removed, it will deteriorate much faster
